The lovely glass bottle is worthy of any fine scotch, and displays the syrup to perfection. This maple syrup is harvested and bottled at the maple farm. No blend, no additives. It is gluten-free and vegan.

Since 1998, master maple syrup artisan Martin Malenfant has been producing organic, 100% pure maple syrup of the highest quality. The hundred year old sugar bush stands in Escuminac in the Chaleur Bay region of Quebec, Canada in the foothills of the Appalachian Mountains. Swept by sea air from the nearby Gulf of St. Lawrence – less than 3 km from the hillside sugar bush – this terroir enjoys a unique climate, ideal for the production of maple syrup.

Escuminac Extra Rare light maple syrup is produced exclusively with sap harvested during the first days of the run making it extra rare. An exceptional syrup with a smooth, velvety texture. It is light in the mouth, featuring a subtle caramel and honeysuckle bouquet with a hint of cinnamon and a lingering flavour.

Escuminac Great Harvest amber maple syrup is produced in the middle of the season. This is an incredibly refined and rich pure amber maple syrup; its aromatic profile brings to mind warm buttered brown sugar, date purée, English toffee and green anise.

Escuminac Late harvest dark maple syrup is a very dark intense pure Canadian maple syrup produced at the end of the harvest. Intensely dark, it is purely delicious. With its suggestion of rye, caramel and roasted sugar, it is perfect for your recipes.

Escuminac produces premium quality maple syrup with a profound respect for the environment. Organic pure maple syrup is the outcome of rigorous management practices in the sugar bush. Other species of trees are left in the woods and the only authorized soil improvers are wood ash, agricultural lime and certain natural fertilizers.

Escuminac maple syrup and its multiple uses in cuisine and mixology

Similar to the contrast between whole and refined grains, unrefined natural sweeteners like maple syrup contain higher levels of beneficial nutrients, antioxidants and phytochemicals than white table sugar or high fructose corn syrup.

Maple syrup can replace refined sugar in almost any culinary preparation. Use it to sweeten cereals, yogurt and fresh fruit as well as to prepare pies, cakes, muffins, pancakes and waffles. Try it on ice-cream, sorbet, frozen yogurt, etc.

Halfway through cooking, you can glaze a roast duck or chicken, or drizzle a grilled or oven-cooked fish with a sauce made with butter, maple syrup and Dijon mustard, with fresh dill for extra zip. Add it to baked beans and ham. It also makes an excellent vinaigrette.

Maple Ginger Ale cocktail recipe

– 0.7 fl oz of ESCUMINAC maple syrup
– 1.35 fl oz of pink grapefruit juice
– 1.35 fl oz of ginger ale
– 0.7 fl oz of vodka (optional)
– Ice cubes
– Lime and sugar (to rim the glass)

Preparation

/01. Add the ESCUMINAC maple syrup, vodka and freshly squeezed pink grapefruit juice to the shaker.

/02. Before adding the ice cubes, shake vigorously for 15 sec. Fill shaker with ice cubes and shake vigorously.

/03. Rim the glasses with lime and sugar.

/04. Fine strain and pour into an old-fashioned glass, add ginger ale and ice to finish.

/05. Garnish with candied grapefruit zest.
